  • Bengal Gram – 2 tbsp
  • Salt
Ingredients for the Masala Dosa Filling
  • Onions chopped – 3
  • Potatoes – 4-5
  • Mustard seeds – ½ tsp
  • Chopped green chilies – 1 or 2
  • A pinch of Asafoetida
  • Coriander leaves- 2 tbsp chopped
  • Bengal gram – 1 tbsp
  • Cumin seeds – 1 tsp
  • Ginger chopped 1 or 1/2 tsp
  • Curry leaves – 10-12
  • Turmeric powder – 1/2 tsp
  • Oil and Salt

  • Oil – 2 tbsp
  • Mustard – 1 tsp
  • Urad dal – 3/4 tsp
  • Bengal gram – 3/4 tsp
  • Asafoetida – A pinch
Procedure for Preparing the Batter

For the batter soak Urad dal, Fenugreek seeds, Toor dal, Bengal gram, par boiled and raw rice in water for 4-5 hours. Next wash the mixture well and add a little salt before grinding to make a smooth texture. Afterwards, Leave the mixture to ferment overnight.

Method for Preparing the Masala Dosa Filling

Boil and mash the potatoes. Then, finely chop the onions, green chilies, and ginger. Heat a pan, add mustard seeds, asafoetida, urad dal, and Bengal gram. Once the dal turns golden brown, add curry leaves, ginger, green chilies, and onions, and sauté until the onions turn pink. Afterwards, add tomatoes, salt, and turmeric powder. Finally, mix in the mashed potatoes and simmer for 5–6 minutes to allow the flavors to blend perfectly.

Preparing the Masala Dosa

Add some oil on a hot tava and pour a small quantity of Dosa batter using a ladle. Spread the batter throughout the pan using the back of the ladle and drizzle some oil all over the Dosa.
